Blueberry Almond Detox Salad

After a hike, yoga, or sweat session, my body usually craves a plate full of goodness, like my super healthy and delicious Blueberry Almond Detox Salad.  With kale, spinach, broccoli, cauliflower, carrots, blueberries, nuts, seeds, and light dressing, this super food salad packs quite a nutritional punch!

Salad Ingredients

  • 1/2 head broccoli (cut apart)
  • 1/2 head cauliflower (cut apart)
  • 1 cup carrots (cut into bite sized pieces)
  • 1 1/2 cups kale (de-stemmed and cut into bite sized pieces)
  • 1 1/2 cups spinach (julienned)
  • 1 avocado (cut into bite sized pieces)
  • sunflower seeds (for garnish)
  • pumpkin seeds (for garnish)
  • dried blueberries (for garnish)
  • fresh blueberries (for garnish)

Blueberry Almond Vinaigrette

  • 1/2 cup fresh blueberries
  • 1/2 cup dried blueberries
  • 1 cup fresh orange juice
  • 1 cup rice wine vinegar
  • 1 inch knob of fresh ginger (peeled)
  • water as needed

Place the broccoli, cauliflower, and carrots into a food processor and pulse until chopped.  Combine the kale and spinach.  Dice the avocado.  Place all of these ingredients into a large bowl and mix together.  To prepare the dressing, combine all of the ingredients and blend until smooth.  Toss the salad with the dressing, and garnish with a sprinkle of nuts, seeds and berries.
