It’s still late Winter, but I’m seeing sign of Spring everywhere! Flowers are starting to bloom, and colorful fruits and berries are making their debut for the year, in farmers markets. With all of the amazing fruits that the upcoming season brings, what better way to add some color and vibrancy to your diet than with a fresh salad? Here, I’ve combined a variety of fruits with some leafy greens, and a citrus vinaigrette, for a sweet and tangy fresh salad.
Combine chopped red apples, pears, plums, strawberries, oranges, and chard – or any combination of fruits and leafy greens that you prefer – use your intuition and taste buds to determine the quantities of each, but here, I’ve used about ¼ of each whole fruit and about 2 cups of chard. I chopped up the stems of the chard, which are safe to eat and actually quite delicious, to add to the salad. I also added avocado, because what salad isn’t more tasty with avocado?!
Citrus Vinaigrette Recipe
(makes 1 cup – which will be more than what you need for 1 serving, but leftovers can be stored for about a week)
- ¾ cup grapeseed oil
- ¼ cup white wine vinegar
- 1 ½ tbsp fresh lemon juice
- 1 ½ tbsp fresh orange juice
- ¼ tsp finely grated orange zest
- ½ small shallot, finely chopped
- freshly ground sea salt and black pepper
Combine ingredients in a mason jar. Cover and shake to blend. Chill. Enjoy!
